Killer Sweet Onion Casserole
Crust: 35 Ritz crackers, crushed (one sleeve)
3/4 c. butter, melted
Mix together and press into 9” pie pan
Saute 3 cups sliced sweet onions in 1/4 c. butter. Place onions on crust when soft.
Spread 2 c. shredded cheese (whatever’s your favorite) on top of onions.
Mix 3 eggs, 1/2 c. milk, 1/2 t. salt, 1/4 t. pepper and pour over top.
Bake at 350 for 30 min.
This recipe is a killer because of the multitude of cholesterol-producing ingredients. You can, however, turn it into a half-killer by using reduced fat Ritz, lowfat Country Crock margarine, skim milk, and egg beaters. Really, it’s not that bad.
This is a great accompaniment for grilling and is a fun, different dish to serve for company. I made it a couple of weeks ago and all that was left at the end of the meal was one lonely little sliver. My five-year-old even liked it. I guess it’s all that yummy butter and cheese.
